Word counts are given as a guide and the usual rule of thumb is that you can transgress the limit by up to 10% on either side (so using that rule of thumb, a 2500 word essay can extend from 2250 to 2750 words).
For my part, the word limits are a guide as to the minimum you should write.
As long as your account is substantive and concise, and reaches that minimum word count, assignment length will not affect the mark you get.
If you do decide to write more than the specification because you are enthusiastic about your subject, then make sure you make it worth my while to read it. (There is nothing worse than reading material that is merely empty padding; such work tends to make your marker cross L …. so don’t do it).
