Unit 2 Lab Assignment
As you have discovered in this unit, alcoholic beverages are one of the highest gross profit items in a restaurant, while at the
same time often poorly presented on the menu or not presented at all.
As the food and beverage manager at a new hotel you are responsible for capturing sales at the small bar in the lobby. Using
the knowledge you have learned in this unit, create a beverage menu for the lobby area. You can use your imagination to put
any twist you want on it. Your menu must have a minimum of 12 offerings and cannot be longer than 1 page. You must also
include at least 2 nonalcoholic offerings
